Blueberry muffs....

...according to the recipe book, it is called 'Blueberry Buns.." but it is muffins as we all call it ya..:-). what i like about this recipe is that .. it is not that sweet at all ...just pleasantly sweet ... (like me...heheheh)

it makes about 12


2 eggs
50g butter, melted
3/4 cup milk
1 tsp vanilla essence
1 tsp grated lemon rind
1 1/2 cups all-purpose flour
1/4 cup castor sugar
2 tsp baking powder
1 1/2 cups blueberries

1. preheat de oven 200 degree C. arrange 12 paper cups in a muffin tin.
2. whisk the eggs until blended and stir in the melted butter, milk, vanilla essence and lemon rind.
3. sift the flour, sugar (superfine) and baking powder into another large bowl. make a well in the centre and add the egg mixture. stir in lightly with a metal spoon.
4. fold in the blueberries gently, then spoon the batter into the paper cups.
5. bake for 20-25mins, until the tops spring back when touched lightly. leave in the tin for 5 mins before turning out on to a wire rack.
