BANANA BREAD
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter (room temperature)
3/4 cup brown sugar2 eggs (beaten)
2 1/3 cups bananas (overripe, mashed)
Directions:
1. Mix the flour, baking soda and salt in a large bowl.
2. Cream the butter and brown sugar in another bowl.
3. Stir the eggs and banana into the butter and sugar.
4. Stir the banana mixture into the flour mixture.
5. Pour the batter into a 9x5 inch loaf pan.
6. Bake in a preheated 350F oven until a tooth pick pushed into the center comes out clean, about 1 hour.
7. Chill in the fridge.

LANGKAWI - PART II
The last time we were in the 'Land of Mahsuri' ( as i called it..) was 5 years ago - at that time my little dotter - syafiqah was not even in the picture yet..and farid, the younger son was only 2 years plus...
and last weekend, we came back to visit the land again....and boyyy...what a tremendous development and changes Langkawi has been... we stay at the resort only - situated along PANTAI CENANG... my kids don't really like the resort room - well...we used to stay at the at least 4 stars hotel or apartment if we were on vacation...but i told them - we could use the extra money on shopping and site seeing and food ;-)
... anyway, i noticed Langkawi not that cheap anymore as it used to be last 5-8 years ago... well, it follows with the development though....
the second day we're at the island - it was raining heavily in the morning towards about noon ... so, we had to stay back in the room till the rain stops...
hmmmm...then we did our shopping and cable car trip...
Rinduuuuuuuuu.....and trip to Langkawi
memang sememangnya rindu...!! rasa lama tak memblog ... like so many stories want to update - i was away for about 1 week... bercuti :-)
normally we never plan if we want to go for a holiday or vacation ... never - that was what happened last week ... when suddenly hubby asked to check flight to LANGKAWI - then i knew - it's happened again....hehehehhe
on Monday, June 14, 2010 ... we headed to LANGKAWI by land ...phewwww...i saved few hundreds bucks on that (not worth to spend so much on air ticket for six of us) ...baik guna utk shopping kan...kan...kan... and that's what i/we did...:-)

STRAWBERRY BREAD RECIPE
Strawberry Bread: Preheat oven to 350 degrees F (180 degrees C) and place the oven rack in the middle position. Butter and flour (or spray with a non stick vegetable/flour spray) the bottom and sides of an 8-cup loaf pan (9 x 5 x 3 inch) (23 x 13 x 8 cm). Set aside.
Place the walnuts (or pecans) on a baking sheet and bake for about 8 minutes or until brown and fragrant. Remove from oven and let cool completely before chopping coarsely. Set aside.
In the bowl of your electric mixer, or with a hand mixer, beat the butter until softened (about 1 minute). Add the sugar and continue to beat until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla extract. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. With the mixer on low, add the flour mixture (in three additions) and sour cream (in two additions) alternately, starting and ending with the flour. Mix only until combined. Gently fold in the chopped strawberries and walnuts.
Scrape the batter into the prepared pan and bake about one hour, or until the bread is golden brown and a toothpick inserted in the center comes out clean. Place on a wire rack to cool and then remove the bread from the pan. Serve warm or at room temperature. This bread can be frozen.
Makes 1 LOAF

Best Carrot Cake In The World
Ingredients
2 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground allspice
4 eggs
2 cups granulated sugar
2 tsp vanilla extract, essence or flavoring
1 1/4 cups veg oil
2 cups (5 med) grated carrots
1 can (20 oz) crushed pineapple, drained
1/2 cup dried coconut
1 cup chopped walnuts
1 cup raisins
Frosting:
2 large packages of cream cheese
1/2 cup powdered sugar
Directions
Preheat oven to 350F/170C/Gas Mark4.
Coat a large loaf pan, 10x15x2 baking dish or bundt pan with oil or cooking spray.
In a mediium mixing bowl stir together using a wooden spoon the FLOUR, BAKING POWDER, BAKING SODA, SALT, CINNAMON, NUTMEG and ALLSPICE.
Set aside.
In another larger bowl mix together using a wooden spoon the EGGS, SUGAR and VANILLA.
Stir in the OIL until the mixture is thick.
Gently stir in the DRY ingredients.
Fold in the CARROTS, WALNUTS (optional), PINEAPPLE, COCONUT, and RAISINS.
Pour slowly into prepared pan and spread evenly.
Bake 55 to 60 minutes or until a knife inserted into the cake comes out clean.
Cool for 15 minute, then turn out on to plate or platter.
Frosting:
In a medium bowl use an electric mixer to blend the CREAM CHEESE and POWDERED SUGAR.
Spread on cake after it has cooled.

pagi tadi sempat lagi mengadun bahan buat APPLE MUFFIN. ini kali ke-3 buat apple muffin tapi kali ke-2 guna resepi dari rumah WATIE...rasanya resepi dari Wattie (Salun de Cake) yang menjadi...resepi dari 'Muffin Recipe' tak menjadi..liat ler...
